Don't you hate it when a cookbook is shown without a table of contents? I do, especially when the list is on the page after the preview page in Amazon. It gives a whole new meaning to the phrase "blind taste test."

Because I'm allergic to chicken, I usually pass on recipe books for soup unless it is a vegetarian cookbook. However, about half of this collection is vegetarian. I've annotated those recipes. In general, I have had a lot of success substituting vegetable broth for chicken broth in homemade soup recipes (sometimes I need to punch up the spice level), but that doesn't work as well in recipes calling for beef broth.
